Recipe: Chickpea and Sweet Potato Curry

In spirit of all things Veganuary, we're got the ultimate beginner-friendly recipe for you and your flatmates to try this January.

Not only does this make a hearty, warm dish for the winter months but is also a good sharing recipe for cooking with flatmates as it serves 6-7 people.

Ingredients (Serves 6–7)

· 1½ tbsp vegetable oil

· 1 tbsp ground cumin (instead of seeds)

· 1½ onions, finely sliced

· 3 garlic cloves, crushed

· 1–1½ tsp chilli flakes (adjust to taste)

· 75g fresh root ginger, peeled and grated

· 2½ x 400g tins chickpeas, drained and rinsed

· 1½ x 400g tins chopped tomatoes

· 1.2kg sweet potatoes, peeled and cut into bite-sized cubes

· Salt and freshly ground black pepper, to taste

· 350g rice, to serve

Method

Before you get going, check that the surfaces are clear and there's nothing on the hob that might burn or get in the way. Check that your kitchen door is closed (since this is a fire door 🔥) and you're good to go!

1. Heat the oil in a large saucepan over medium heat. 

2. Add the ground cumin and fry for 30–60 seconds to release aroma.

3. Add the onions and a pinch of salt; cook for 5–6 minutes until soft.

4. Stir in garlic, chilli flakes, and ginger; cook for 3 minutes.

5. Add chickpeas, chopped tomatoes, and sweet potatoes.

6. Pour in enough water (about 750ml) to cover the vegetables. Bring to a simmer.

7.Cover and cook on medium-low for 30–35 minutes, stirring occasionally, until sweet potatoes are tender and sauce thickens. Keep a close eye on your curry and never leave it unattended as it may burn. Add more water if needed.

While your curry cooks, we recommend that you open a window and turn on the extractor fan to allow smoke and steam to escape. 

8. Season with salt and pepper.

9. Cook rice according to packet instructions and serve with curry.

Once you've finished cooking, be sure to wipe away the surfaces and clear up any spills or grease, ready for the next person to use.
