An alcohol-free take on the viral vodka pasta

Traditionally, this classic dish features a rich tomato-based sauce with cream and a splash of vodka. However, if you prefer to avoid alcohol, want to be mindful of flatmates who don’t drink, or simply don’t have vodka on hand, you can still enjoy a delicious, alcohol-free version without compromising on flavour. Ingredients:

• 2 tablespoons olive oil

• 1 small onion or 2 banana shallots, finely chopped

• 3 garlic cloves, minced

• 1/4 teaspoon red pepper flakes (optional, for a hint of heat)

• 100 grams tomato paste

• 100 ml single or double cream

• 200 grams of your favourite pasta shape

• 30 grams grated Parmesan cheese (plus extra for serving)

• Fresh basil leaves, for garnish

• Salt and freshly ground black pepper, to taste

Instructions:

1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Before draining, reserve about 1 cup of the pasta cooking water.

2. Prepare the Sauce: In a large pan, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and red pepper flakes, cooking for an additional minute.

3. Add Tomato Paste: Stir in the tomato paste, allowing it to cook and caramelize slightly, which deepens the flavour. This should take about 2-3 minutes.

4. Incorporate Cream: Pour in the cream, stirring until the sauce becomes smooth and orange in colour. If the sauce appears too thick, gradually add some of the reserved pasta water until you achieve your desired consistency.

5. Combine Pasta and Sauce: Add the cooked pasta to the pan, tossing to ensure each piece is thoroughly coated with the sauce. Stir in the grated Parmesan cheese, allowing it to melt into the sauce. Season with salt and freshly ground black pepper to taste.

6. Serve: Divide the pasta among serving bowls. Garnish with additional Parmesan cheese and fresh basil leaves. Enjoy immediately.
