Warm up this winter with a hearty veggie lasagna

Ingredients
- Vegetables of your choice (Alisha recommends courgette and carrots)
- Lasagne sheets
- White sauce (you can buy this pre-made)
- 500g tomato passata
- Italian seasoning (or herbs of your choice)
- Cheese for the top of your lasagne (optional)
- Salt, pepper
Method
- Pre-heat your oven to 180 degrees
- Roughly chop your vegetables into chunks and place on baking tray, drizzle with oil and seasoning of your choice. Roast for 30 minutes
- Add 1 tbsp of oil or some cooking spray to a pan and heat up before adding diced onion and herbs. Add the passata and let it simmer for 7-10 minutes
- Stir your vegetables into the sauce and allow it to cook for a further few minutes
- Now it's time to layer up! Take your baking dish and add a layer of vegetables and sauce. Add a layer of pasta sheets, white sauce and repeat the layers until you've used everything up. On the final layer of pasta, spread a layer of white sauce and top with cheese if you want it extra cheesy!
- Bake for 35 minutes at 180 degrees and there you have it!
