Warm up this winter with a hearty veggie lasagna

Residential Adviser, Alisha, shares her step-by-step guide to making a delicious veggie lasagna, fit for beginners!

Ingredients

  • Vegetables of your choice (Alisha recommends courgette and carrots)
  • Lasagne sheets
  • White sauce (you can buy this pre-made)
  • 500g tomato passata 
  • Italian seasoning (or herbs of your choice)
  • Cheese for the top of your lasagne (optional)
  • Salt, pepper

Method

  • Pre-heat your oven to 180 degrees
  • Roughly chop your vegetables into chunks and place on baking tray, drizzle with oil and seasoning of your choice. Roast for 30 minutes
  •  Add 1 tbsp of oil or some cooking spray to a pan and heat up before adding diced onion and herbs. Add the passata and let it simmer for 7-10 minutes
  • Stir your vegetables into the sauce and allow it to cook for a further few minutes
  • Now it's time to layer up! Take your baking dish and add a layer of vegetables and sauce. Add a layer of pasta sheets, white sauce and repeat the layers until you've used everything up. On the final layer of pasta, spread a layer of white sauce and top with cheese if you want it extra cheesy!
  • Bake for 35 minutes at 180 degrees and there you have it!
